
Blend together in a jar or tall-sided bowl
(I use a hand blender in a tall mason jar)
4 eggs until frothy
Then add
1 cup milk
1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon pure vanilla extract
1/8 teaspoon cinnamon
1/8 teaspoon grated nutmeg
1/8 teaspoon cardamon
or whatever bits of flavor you want
Put a cast-iron skillet in the oven
At 425F
Put 1/3 cup butter in the pan while the oven is heating
Pour the batter into the pan in the oven, slowly, over the melted butter
Bake 20 minutes or until golden brown and puffy
