Mix
4 teaspoons yeast
3 tablespoons of sugar
In
1 cup warm water
Set aside until foamy
Then add that to
6 cups flour
1 tablespoons salt
Slowly add in 1 ½ cups of water as you knead
Knead for about ten minutes (this makes them have that chewy texture)
Cover and let the dough rise until doubled in the bowl
Butter parchment paper on two cookie sheets
Separate and shape the dough into balls, then stick your finger through the center and make into rings
Cover the bagels and let rise an hour
Place bagels into a big pot of boiling water
Boil each side for two min (time it-this is what makes a great texture)
If you want toppings then whisk an egg and brush the tops of the bagels
You could top them with minced fresh garlic or onion, poppy or sesame seeds, coarse salt, cheese or whatever you like (in the photos I topped them with a mixture of seaweed flakes and coarse sea salt)
Bake at 425ºF for 20 min until golden brown
