Whisk together
1 envelope active dry yeast (about 2¼ teaspoons)
2 teaspoons honey
2½ cups warm water
Let rest in a warm spot until foamy
Knead that with
5 cups (625 g) all-purpose flour
1 tablespoon salt
Coat that in about
4 tablespoons of olive oil
Cover and let rise until doubled
Butter a 9x13" baking pan (or smaller if you want thicker bread)
Pour one tablespoon of olive oil in the pan too (this gives it that crispy, flavorful exterior)
Spread the dough into the baking pan, adding any leftover oil from the bowl
Let rise until doubled
Then dimple the dough with your fingers (reaching all the way to the bottom of the pan)
Drizzle a bit more olive oil on top
Sprinkle on some flaky salt too
Bake at 450F for 20-30 minutes, until golden
I then cut these into thick squares and put any leftovers in the freezer to preserve and pull out later for a sandwich or whatever.
These are all the reasons the van had to have a freezer and an oven!
